It’s tomato season and the chefs have made the most of it with this refreshing Caldo de Tomate
Tomato and chipotle broth, heritage tomatoes and cassava gnocchi is bound to make you feel summery!
Now, we all look forward to the ceviche dish and this particular one is making a comeback from our spring menu as it was such a firm favourite of both the guests and the team.
Blue corn tostada, trout marinated in lime and chilli, tamarillo dressing.

Pork tenderloin with citrus glaze, Michoacan style pulled pork rice croquettes, tomatillo salsa verde, red cabbage
This dish is followed by a refreshing shot of Lime, ginger and hibiscus granita to cleanse the palette before Bea’s show stopping dessert…
We’re all excited that this dish is back… Chocolate cake, Colombian coffee and chocolate mousse, dulce de leche won tons, uchuva and orange compote
This desert includes all of Bea’s favourite ingredients and it really is the showstopper of the whole menu!
